Our Blanc de Blancs is sourced from a block of Old Wente clone Chardonnay three weeks before our still Chardonnays. We harvest the fruit early in the morning when the berries are cold and take it directly to our press to use only the free-run juice. The juice is fermented on the lees for eight months in neutral French oak and is later transferred to bottle for another 49 months to complete its secondary fermentation. To finish the wine, we use an extremely low dosage to create an extra Brut sparkling wine with great vibrancy and finesse.
