Blanc de Noirs
After introducing our Blanc de Blancs with the 2016 vintage, the 2019 Blanc de Noirs marks the next evolution in our sparkling program. Sourced from the Estate vineyard block as our Rosé, the fruit is harvested earlier to preserve natural acidity and lower sugar, then gently pressed to maintain a pale color and refined base wine. The wine undergoes secondary fermentation in bottle and is aged on the lees to develop complexity and a fine mousse. Finished with an exceptionally low dosage, it is released as an Extra Brut with vibrancy and precision.
