The Goldfields is our new Chardonnay in the Donum lineup, named after Burke's Goldfields flower, a rare flower found only in the Santa Rosa Plain area where our Winside Vineyard is situated. This wine is made from the same fruit as our Russian River Valley Chardonnay, but it differs in the way the wine is made. Half of the wine is fermented and aged in a concrete egg for 11 months, and then aged for an additional 4 months in stainless steel. The other half is fermented in the orange-wine style, with the skins for about two weeks, before being pressed and put into a barrel for aging. This skin-fermentation technique adds tannin and phenolics to the wine, while the concrete portion contributes to the texture and volume.
