The Heron is a wine based on its vinification technique. The base wine for The Heron comes from the same pressing as our Carneros Estate Chardonnay, but from there, two paths diverge. While the Carneros Estate Chardonnay goes into French oak, The Heron is transferred to a concrete amphora where it is fermented and aged for up to 10 months. The wine is then transferred to stainless steel barrels to complete the aging process.
